Steps
Measure your rice into a cup. A standard ratio is one part rice to one and a quarter parts water for short grain, or one to one and a half for long grain.
Rinse the rice in a fine-mesh strainer under cold running water until the water runs mostly clear. This removes surface starch so the grains stay separate.
Drain the rice well and shake off excess water. Let it sit in the strainer for a few minutes so it is not soaking wet when it hits the pot.
Put the rice and measured cold water in a heavy pot. Add a pinch of salt if you like. Bring it to a boil over medium-high heat without a lid.
Once it boils, turn the heat to low and put the lid on. Cook for about 15 to 18 minutes. Do not lift the lid while it cooks.
Take the pot off the heat and leave the lid on. Let the rice rest for 10 minutes so the steam finishes cooking it and the grains firm up.
Fluff the rice gently with a fork or rice paddle. Serve while hot.
Tips and common mistakes
Use the same measuring cup for rice and water so the ratio stays accurate.
Keep the lid on during cooking and resting. Peeking lets steam escape and gives uneven rice.
If the rice is still crunchy after resting, add a splash of water and cook on low for 5 more minutes.
Rinse the rice until the water is nearly clear to avoid gluey, sticky grains.
Questions
Do I need to soak the rice first?
No. A good rinse is enough for most white rice. Soaking is optional and mainly helps with certain varieties.
Why is my rice mushy?
Too much water or too long a cook time causes mush. Stick to the ratio and start the timer once the water boils.
Can I use this method for long grain rice?
Yes. Use slightly more water, about one and a half parts water to one part rice, and check it after 15 minutes.
