What you need
Steps
Heat your oven to 200 C (400 F). Line a baking sheet with parchment or lightly oil it so the squash does not stick.
Cut the squash in half lengthwise with a sharp knife. Scoop out the seeds and stringy pulp with a spoon.
Rub the cut sides with oil and season with salt and black pepper. Place them cut side down on the baking sheet.
Roast for 40 to 50 minutes until the flesh is soft. A knife should slide in with no resistance.
Let the squash cool for 10 to 15 minutes. Scoop the flesh out of the skin into a bowl.
Blend the flesh until smooth, adding a splash of water or stock if it is too thick. Scrape down the sides as you go.
Store the puree in a sealed container in the fridge for up to 4 days, or freeze portions for later.
To make the coconut soup, blend 2 cups puree with 1 can lite coconut milk, 8 oz silken tofu and 2 tsp Chinese five spice. Season with salt and pepper.
Tips and common mistakes
Cut the squash on a stable board and keep your fingers clear of the blade, since the skin is hard and the knife can slip.
Roast cut side down so the edges caramelise and the flesh stays moist.
Blend longer than you think for a silky puree, and add liquid a spoonful at a time.
Taste the soup before serving and adjust the five spice, since it can overpower the squash.
Questions
Can I use a different squash?
Yes. The same roasting and pureeing method works with pumpkin, acorn squash or other firm winter squash.
Do I have to peel it before roasting?
No. Roasting with the skin on keeps the flesh moist, and the skin lifts off easily once it is cool enough to handle.
How much puree does one squash make?
A medium butternut squash usually gives about 2 to 3 cups of puree, enough for one batch of the soup.
