How to make spiced apple crumble muffins from mealy apples

Grainy, mealy apples taste soft and dry when eaten fresh, but they bake beautifully. This guide turns them into spiced apple crumble muffins with a crisp oat topping. It suits beginner bakers and anyone who wants to use up a disappointing batch of apples instead of binning them.

What you need

Steps

  1. Sort your apples. Soft, grainy or mealy fruit is fine as long as there is no mould, rot or brown mush inside. Grate or cook the rest rather than eating them raw.

  2. Heat the oven to 180 C (350 F) and line a 12-hole muffin tin with paper cases.

  3. Coarsely grate 2 or 3 apples, skin on if you like it. Squeeze the grated apple in your hands over the sink to press out the extra juice.

  4. Mix 250 g plain flour, 2 tsp baking powder, 1 tsp cinnamon, a pinch of salt and 100 g sugar in a large bowl.

  5. In a jug, whisk 2 eggs, 120 ml milk, 80 ml melted butter or oil and 1 tsp vanilla.

  6. Pour the wet mix into the dry and stir just until no dry flour shows. Fold in the grated apple and stop mixing, even if the batter looks lumpy.

  7. For the crumble, rub 60 g oats, 40 g flour, 40 g sugar, 1/2 tsp cinnamon and 50 g cold butter together with your fingertips until crumbly.

  8. Fill the cases two thirds full, scatter the crumble on top and bake for 20 to 25 minutes, until a skewer in the middle comes out clean.

  9. Cool the muffins in the tin for 10 minutes, then lift them onto a rack so the bases do not go soggy.

Tips and common mistakes

Grate the apples instead of chopping them, so the soft texture disappears into the crumb.

Taste a piece of apple first and drop the sugar to 80 g if the fruit is already very sweet.

Toss the grated apple in a spoonful of the flour mix before folding it in, which stops it sinking.

A big glut can go into apple butter or apple oatmeal instead, where slow cooking fixes the texture.

Questions

Can I use really soft, mushy apples for muffins?

Yes, as long as they smell fine and have no mould. Cut out any bruised or rotten patches, then grate or mash what is left.

Why are my apple muffins soggy?

Too much apple juice is the usual cause. Squeeze the grated apple well and bake until a skewer comes out with no wet batter on it.

Can I freeze these muffins?

Yes. Freeze them fully cooled in a bag for up to 2 months and thaw at room temperature, or warm them for 20 seconds in a microwave.
