What you need

Steps

  1. Wash 420 g of jasmine rice until the water runs clear. Add it to the rice cooker with 2 1/2 cups of water and start it cooking.

  2. Put 2 lb of 96/4 lean ground beef and 16 oz of diced bell peppers in a large skillet. Season with 8 g salt, 5 g black pepper, 8 g garlic powder, 6 g onion powder and 5 g smoked paprika.

  3. Mix everything well and cook over medium-high heat until the beef is about halfway done, still slightly pink.

  4. Push the beef to one side of the pan. Add 10 chopped slices of beef bacon, 3 whole eggs and 16 oz of egg whites to the empty side.

  5. Cover the pan with a lid and let it cook for 3 to 5 minutes before mixing the eggs and bacon into the beef.

  6. Keep cooking uncovered until the eggs are fully set and the beef is cooked through with no pink left.

  7. Add the cooked rice and 7 oz of part-skim mozzarella to the pan. Stir until the cheese melts and everything is evenly mixed.

  8. Divide the mixture evenly into 7 meal prep containers. Let them cool slightly, then seal and store.

  9. Spoon a little mild mango habanero sauce over each bowl when you reheat it, or pack it in a small side cup.

Tips and common mistakes

Cool the bowls uncovered for about 20 minutes before sealing so condensation does not make the rice soggy.

Keep the bowls in the fridge for up to 5 days, or freeze them for up to 3 months.

Reheat frozen bowls with about 1/4 cup of water and a vented lid for roughly 5 minutes.

Cook the beef only halfway before adding the eggs so the eggs do not overcook and turn rubbery.

Questions

Can I use a different protein?

Yes. Ground turkey or chicken breast works in place of the lean beef. Adjust the seasoning to taste.

How do I reheat the bowls?

Microwave for 2 to 3 minutes, stirring halfway. Add a splash of water if the rice looks dry.

Is the mango habanero sauce very spicy?

The recipe uses a mild bottle, so it adds flavor without much heat. Taste a little first and add more if you like.
