What you need
Steps
Mix 1/2 tbsp turmeric, 2 tsp cumin powder, 1/2 tbsp coriander powder, 1/2 tbsp garam masala, 1 to 1 1/4 tbsp tandoori masala, 1/2 tbsp Kashmiri chilli powder and 1/2 tbsp onion powder in a bowl.
Stir in a few spoonfuls of yogurt or oil to make a thick paste. Taste it and add salt.
Pat the chicken thighs dry with kitchen paper, then coat them all over with the paste.
Leave the coated thighs in the fridge for at least 15 minutes so the spices soak in.
Preheat the air fryer to 190C for 3 minutes.
Lay the thighs in a single layer in the basket. Do not stack them.
Cook at 190C for 12 to 15 minutes, turning once halfway, until the edges char and the centre reads 75C on a meat thermometer.
Rest the chicken for 3 minutes, then slice it and serve over hot rice.
Tips and common mistakes
Keep the thighs in one layer so hot air reaches every side and the skin crisps.
Swap the tandoori spices for peri peri or soy and honey to make other versions with the same method.
Check the thickest part with a thermometer. Undercooked chicken is a real risk.
Do not crowd the basket. Cook in two batches if you have a small air fryer.
Questions
Can I use bone-in chicken thighs?
Yes, but add about 8 to 10 minutes and check the meat reaches 75C near the bone.
Do I have to marinate overnight?
No. Fifteen minutes works, but a few hours in the fridge gives deeper flavour.
What can I serve with it?
Plain rice, naan, a cucumber salad or a spoon of yogurt all work well.
