What you need
Steps
Peel and roughly chop the white onion. Peel the garlic cloves and finely chop them. Deseed and chop the red chilli, keeping the seeds in if you want more heat.
Heat a splash of olive oil in a large pan over medium heat. Add the onion, garlic and chilli and fry for about 5 minutes until soft.
Peel the carrots and the butternut squash. Cut the squash in half, scoop out the seeds, then chop both into rough chunks about 2 cm thick.
Add the carrot and squash to the pan with the softened onion mix. Crumble in the vegetable stock cube and season with salt and pepper.
Pour in enough boiling water to just cover the vegetables, about 700 ml to 1 litre. Stir once and bring back to a gentle simmer.
Put the lid on and simmer for 20 to 25 minutes, until the squash and carrot are soft enough to crush easily with a spoon.
Take the pan off the heat and let it cool for a few minutes. Blend with a stick blender or in a jug blender until smooth.
Check the consistency. Add a little hot water if it is too thick, or simmer a bit longer if it is too thin. Taste and adjust the seasoning.
Ladle into bowls and top with chopped fresh parsley and a pinch of dried chilli flakes if you like.
Tips and common mistakes
Fill the blender only halfway and hold the lid with a cloth, since hot soup can burst out.
Keep the chilli seeds in for a stronger kick, or leave the chilli out for a milder soup.
Let the soup cool fully before storing it in the fridge, then reheat it until piping hot.
Add a splash of hot water when reheating, as the soup thickens in the fridge.
Questions
Can I make this soup without a blender?
Yes. Mash the vegetables well with a potato masher for a chunkier soup, or use a stick blender for a smoother result.
How long does butternut squash soup keep?
Store it in a sealed container in the fridge for up to 3 days, or freeze it in portions for up to 3 months.
Can I use a different squash?
Yes. Other firm winter squash work the same way, but cooking time may vary slightly, so test with a spoon.
