Steps
Heat the oven to 400 F (200 C). Cut the butternut squash in half lengthwise and scoop out the seeds with a spoon.
Place both halves cut side up on a baking tray. Add the onion wedges and garlic cloves around them and drizzle everything with oil.
Season with salt and pepper. Roast for 40 to 50 minutes until the squash flesh is soft and a knife slides in easily.
Let the squash cool for a few minutes, then scoop the flesh out of the skin with a spoon. Discard the skin.
Put the roasted squash, onion and garlic in a blender. Add vegetable broth, a tablespoon of maple syrup, a pinch of cinnamon and nutmeg, and salt and pepper.
Blend until smooth. Add broth a little at a time to reach the thickness you like.
Pour the soup into a pot and warm it over medium heat for 5 minutes. Taste and adjust the salt, pepper and maple syrup.
Ladle into bowls and top with pepitas, a swirl of cream or a little butter if you like.
Tips and common mistakes
Roast the squash whole and unpeeled so you skip the hard job of peeling and cubing it.
Open the blender lid vent and hold a towel over it when blending hot soup, or the steam can push the lid off.
Add the broth gradually, since a thin soup is hard to fix but a thick one is easy to loosen.
A tablespoon or two of butter stirred in at the end adds creaminess if you eat dairy.
Questions
Can I make this soup vegan?
Yes. Use vegetable broth and skip the butter, or use a plant-based butter. The soup is creamy from the blended squash alone.
How long does the soup keep?
Store it in a sealed container in the fridge for up to 4 days. Reheat gently on the stove or in the microwave.
Can I use frozen squash instead?
You can, but you lose the roasted flavor. If you use it, roast it first or add extra cinnamon and nutmeg to make up for it.
