What you need

Steps

  1. Roughly chop the bell pepper, halve the 3 tomatoes, dice the eggplant and chop the red onion. Put it all in the air fryer basket.

  2. Season the vegetables with salt, smoked paprika, black pepper, oregano, French herbs and broth spices. Add the 100 g olive oil and mix well.

  3. Set a mesh container on top of the vegetables and spread the 200 g cherry tomatoes over it.

  4. Air fry for 20 minutes at 180°C (350°F).

  5. Take out the top tomatoes and set them aside. Add the cream cheese and fresh basil to the baked vegetables in the basket.

  6. Blend the vegetables until smooth, then stir in the reserved soft tomatoes.

  7. Press nests of tagliatelle into the sauce and turn them to coat. Return the basket to the air fryer for 15 minutes at 180°C (350°F).

  8. Transfer to a plate, sprinkle with grated cheese, add fresh basil and a crack of black pepper.

Tips and common mistakes

Chop the vegetables into similar-sized pieces so they cook evenly.

Check that your pasta is fully coated in sauce before the second bake, or the edges can dry out.

Use an immersion blender in the basket or transfer the vegetables to a jug to blend safely.

Let the dish rest a couple of minutes before serving so the sauce thickens.

Questions

Can I use a different pasta?

Yes. Short pasta like penne or fusilli works, but check it is covered by sauce and add a few extra minutes if needed.

Do I have to use a mesh container?

It keeps the cherry tomatoes above the vegetables so they stay soft. A small rack or foil tray with holes works too.

Is the pasta cooked before it goes in?

No. The dry tagliatelle bakes in the sauce, so keep it well coated and do not skip the second 15-minute bake.
