How to make chicken stock cubes from a leftover carcass

Turn a picked chicken carcass and vegetable scraps into concentrated stock cubes you can freeze and drop into any dish. It suits anyone who wants less waste and a steady supply of flavour base. You need a large pot, a sieve and a few hours of gentle simmering.

What you need

Steps

  1. Put the chicken bones and scraps into a large pot. Add optional onion, carrot, celery, garlic and herbs such as thyme and peppercorns.

  2. Cover everything with cold water and add 1 to 2 tsp vinegar. Starting with cold water helps draw flavour and collagen out of the bones.

  3. Bring the pot to a boil over high heat. Skim off the scum that rises to the surface as it forms.

  4. Turn the heat down to a gentle simmer, not a rolling boil, and cook for 4 to 6 hours. Top up with water if too much evaporates.

  5. Strain the stock through a sieve into a clean pot. Keep the strained solids and simmer them again for a second, lighter stock if you like.

  6. Put the strained stock back on low heat and reduce it until you have about 200 to 500ml left.

  7. Pour the reduced stock into a glass container or an ice cube tray. Let it cool, then put it in the fridge until it sets.

  8. Cut the set stock into cubes and store them in the freezer. Drop a cube into any dish, or dissolve it in hot water to make stock again.

Tips and common mistakes

Do not add salt while cooking, so the cubes stay flexible for sauces, soups and risottos.

Keep the heat low and steady; a hard boil makes the stock cloudy.

A carcass alone sets only loosely, so add drumsticks, thighs, back or neck for a firmer, gelatinous cube.

Cool the stock quickly and keep it in the fridge for no more than 5 days before freezing.

Questions

How much water do I add to a stock cube?

Start with about 200ml of hot water per cube and taste it. Add more water if you want a lighter stock, or less for a stronger flavour.

Can I make this with a shop-bought rotisserie chicken?

Yes. Pick off the meat first, then use the skin, bones and any scraps in the pot exactly the same way.

How long do the frozen cubes keep?

They stay good in the freezer for around 3 months. Store them in a sealed bag or box so they do not pick up other smells.
