What you need
Steps
Soak the chickpeas and red lentils in plenty of water until softened. Drain them completely and rinse with fresh cold water.
Put the drained chickpeas and lentils in a blender with 100 ml cold water. Blend until the mixture is completely smooth with no visible chunks.
Add the flaxseed, baking powder, salt and any optional spices. Blend again briefly so everything is evenly mixed.
Let the dough rest for a few minutes so the flaxseed can bind the mixture and thicken it.
Line a loaf tin with baking paper and spoon in the dough. Smooth the top and scatter sesame seeds over it if you like.
Heat the oven to 170°C (340°F). Bake the loaf for 1 hour until firm and browned on top.
Take the bread out and leave it in the tin for a few minutes, then lift it onto a rack. Cool completely for 1 to 2 hours before slicing.
Tips and common mistakes
Slicing the loaf while it is still warm makes it sticky, so wait until it is fully cool.
Drain the soaking water fully and use fresh cold water for blending, or the loaf can taste bitter.
If your blender struggles, blend in two batches and scrape down the sides between pulses.
Check the loaf is cooked through by inserting a skewer in the centre; it should come out clean.
Questions
Can I use canned chickpeas instead of dried ones?
The recipe uses dried chickpeas that are soaked first. Canned chickpeas are already cooked and much wetter, so the loaf may not set the same way.
Why did my bread turn out sticky inside?
It was probably sliced too soon or underbaked. Let it cool completely for 1 to 2 hours and bake it the full hour at 170°C.
Can I leave out the flaxseed?
Flaxseed helps bind the dough and gives it structure. Leaving it out will likely make the loaf crumbly and harder to slice.
